This wine was destined for Japan but the deal fell through at the last minute. This top quality Marlborough Sauvignon Blanc was being served in some of the best restaurants in Japan.

The wine has a beautiful crisp acidity. A strong mouthfeel of grapefruit and gooseberry with hints of fresh herbs on the finish.

The grapes were gently machine harvested and sorted, gently pressed reductively with the juice being clarified via floatation,
racked directly to ferment. This wine was co-fermented with competing strains to ensure vibrancy and complexity in the wine. Ferment lasted approximately 5 weeks. Just prior
to completing fermentation, the wine was racked off primary solids, but left on light lee for an extended period.

Great with light, fresh food or simply a glass of wine on its own.
