Cantine Paolo Leo bring true Italian expertise in their range of wines from the Salento appellation of Puglia. Their Negroamaro uses grapes that are hand harvested in the early hours of the morning to preserve freshness and aroma. Fermentation with daily pump-overs precedes a further malolactic fermentation for 5 months in stainless steel tanks. Intense ruby ​​red with violet reflections, the nose brings ripe red fruit, currant jam and raspberries. The palate shows well-ripened plums alongside black pepper and warm cinnamon. Well-balanced tannins, structural freshness, and a tantalising finish with a spicy persistence. Try with braised meats. spiced cured meats, aubergine or textured cheeses.
