Bohigas Reserva cavas are aged in the cellar for at least 15 months, most more. The bottles are then clarified and disgorged. 

Winemakers note
"Pale yellow colour. Constant and small bubble. Foam of great persistence. Very fruity aromas of white fruit (acid apple and pear) on shades of peel of citrics and white flowers. In the background, some spicy notes owed to ageing (cinnamon) and cookies. It is a well-structured "cava" in the mouth. Well picked up over its acidity that tenses it overall from beginning to end. The bubble lends a creamy feeling, and it gives volume and softness to the structure that returns acidity and widens the aromas of white fruits and spices that are repeated in the mouth. Its balanced end harmonizes its acidity, and leaves a memory of freshness and volume owing to its light sugar content."

Yellow with golden highlights due to its ageing. Very fine bubbles with a slow, regular detachment. Maximum persistence of the crown due to long contact with fermentation yeasts.
Highly complex aromas, combining fresh fruit with jam and syrup. On the whole offering long development, always with freshness as the focus of perception and advancing to fine notes of toast, dried fruit and nuts, spices (anis) and a touch of minerals (graphite).
On the palate we note its powerful character softened by a subtle sweetness which, together with a good structure and fine bubble, forms an indestructible whole to accompany the aromas of ripe fruit with long persistence. Evolution with notes of pastry, spices and toast to produce a product with great power and projection in the glass.

Italia (Puglia Italy) 2022 IGT Sangiovese

A medium bodied, everyday drinking red with aromas of red berry and damson fruit. Fresh and lively on the palate with ripe berry fruit balanced by tangy acidity and quite firm tannins leading to a warm, spicy finish.

Fermentation took place at 28 to 30C with 10 days on the skins and daily pumping over. After malolactic fermentation the wine was transferred to Adria’s cellars where it is bottled.

A blend of traditional Rhône grape varieties such as old vine Cinsault, Grenache Noir and Syrah. Sourced from the Languedoc and Costières de Nîmes. The Cinsault grapes are from particularly old vines in the Languedoc. The Grenache Noir and Syrah grow in Costières de Nîmes. All the grapes were harvested from about 4am in the morning to make sure they arrived cool at the winery. Each grape variety was harvested and pressed separately and then vinified at low temperatures to maintain the bright fruit characteristics.

A very fruity and mouth-filling yet ultimately dry Rosé, packed with juicy red berry flavours, a luscious texture and savoury finish. The Languedoc Cinsualt brings a touch of spice.

Made from parcels of Grenache, Syrah and Carignan grown in Costières de Nîmes on red pebble and limestone terroir. Fermentation is kept short to preserve the generous fruit flavours. All the varieties are vinified separately to give Guillaume full flexibility when it comes to blending. The tannins from these sun-ripened grapes soften quickly, so very little ageing is required to keep it supple and more-ish.

Aromas of red berries leads to a juicy palate with savoury notes. The soft tannins give the wine a round, velvety mouthfeel making it very easy-drinking.

Try with a slightly spicy beef cassoulet, some mature hard cheeses, or a mushroom risotto.
