Barley sugar and a hint of mint before leading into wonderful notes of freshly cut wild flowers; buttercup, daisy, meadowsweet, myrtle, primrose and cherry blossom. The cleanliness of the spirit is remarkable. More aromas rise from the glass, little zephyrs of spindrift and sea pinks reminding you that this spirit is matured exclusively by the sea. After four or five minutes with the addition of a little water, caramelised fruits drift onto the scene; lemon drops and honey.

"This Port Charlotte 10 year old has been conceived, distilled, matured and bottled on Islay alone. We are a young team with deep-rooted values, and an ambition to make the ultimate “Islay” Islay whisky. A whisky made by people not software; a whisky watched over every day of its maturing life by those who made it; a whisky born of a community with a vision and a mission to kick start a single malt whisky revolution, this Port Charlotte 10 year old is who we are. This is where we’re from.

Nose – The smoke is calmed by the marine, ozone character, time has brought a balance, a harmony in the combination of oak, smoke and spirit. While the smoke is always discernible on the nose it is dry, earthy, peatash in its style and so allows the oak to come forward with waves of golden caramel, fudge, vanilla custard, hints of ginger, nutmeg and clove. There is citrus fruit, coaxed from the glass with a drop of water, gentle lemon meringue and clementine. Breathe deeply and the floral aromas of wild thyme, heather and sea pink bring you to this Atlantic coast.

Palate – On the palate there is a noticeable delicacy and softness in texture and style. Again, the balance of flavour is superb as the smoke wraps loosely around the sweetness drawn from deep within the oak. Coconut, vanilla custard, lemon honey combines with smoked oysters and sun baked salty sand."

Each expression of Caol Ila (pronounced 'Cull Ee-la') reflects a special quality of the light at this remote Islay distillery. Together they picture a day in its secret cove on the Sound of Islay. Brilliant, clean and finely balanced, this special Caol Ila Distillers Edition has all the clarity of sunshine flooding the landscape with colour after a storm. Richer, more intense and many layered than regular expressions, it yet remains true to the Caol Ila character, first seen in 1846. Here are those pure sea-air aromas and sweet smoky-dry flavours, expressed with a complex, rich spiciness that surprises and delights. Each bottle carries a release number, which designates the selected casks especially chosen for double maturation. 

Cenote (Mexico) Reposado Tequila 700ml

Master distiller Arturo Fuentes and master blender Alejandro Garcia Páez create the Cenote Tequila range using blue agave which has matured for at least 6 years. Four Pillars (Australia) Bloody Shiraz Gin 37.8% 700ml

An incredibly rich, deep purple colour, which turns iridescent pink when mixed with tonic or soda. Aromatically it has fresh pine needles, citrus and spice, and a peppery, dense raspberry character. The palate is lovely and sweet with a long juniper finish.

Four Pillars Gin is a craft distillery based in Healesville in Melbourne’s Yarra Valley. Founded in 2013, they make gin. Actually they make gins, plural. From their original multi-award winning Rare Dry Gin to the only gin in the world made just for a Negroni, from a Navy Strength Gin that is best in its class to their entirely unique Bloody Shiraz Gin. 

And they are always based on the four pillars of great copper stills, pristine Yarra Valley water, traditional, exotic and native botanicals, and a massive amount of love and attention to detail at every stage of the production process. Four Pillars Gin brings a delicious and very modern Australian take on gin to the world. 

Four Pillars (Australia) Negroni Gin 700ml

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.

Four Pillars (Australia) Yuzu Gin 41.8% 700ml

Four Pillars is an Australian gin distillery located in the famous wine region – the Yarra Valley (an hour outside of Melbourne). Four Pillars launched in 2013 and since then has gone on to become Australia’s number 1 cra! spirit, available in over 25 markets around the world.

Fresh Yuzu Gin, as the name suggests, is a bright, aromatic and (yes) fresh dry gin. The defining character is fresh yellow yuzu, grown in Victoria. The yuzu aromatics are an interesting mix of lemon, mandarin, cumquat and grapefruit – all bright, fresh citrus notes. Finger lime adds some deeper citrus character.

Glencadam (Highland) 13yr Re-Awakening 46% 700ml

Back in 2000, the Glencadam distillery was closed only to be reopened three years later in 2003. In 2017, to mark 13 years since the distillery reopened, Glencadam release this 13 year old expression, named The Reawakening. Only 6,000 bottles were produced. This Highland single malt whisky is named ‘The Re-Awakening’ and has been aged in ex-bourbon barrels before being bottled at a pleasing 46%. The Glencadam 13 is a grassy dram, with hints of vanilla, citrus and spice.

Glenfarclas (Scotland) '105 Cask Strength' 60% 700ml

When Christmas came to Glenfarclas, former distillery chairman George S Grant would select a single cask from the warehouses to share with his friends and family. He bottled these whiskies at their natural strength, a gesture of generosity and a testament to the quality of the spirit. They proved so popular that in 1968, Glenfarclas became the first distillery to introduce a cask strength bottling to its core range. This pioneering whisky would ultimately become the iconic Glenfarclas 105 – vatted to a strength of 60% for a pure expression of the distillery’s richly sherried character.

A full 60% abv, yet the sweet, rich, spicy distillery character is still very much in evidence. A very small drop of water is recommended to open up the flavours.
