Maude’s Pinot Noir combines fruit from 5 sub–regions within Central Otago, each region contributed uniquely to the blend. Fermented very traditionally in open topped tanks, hand plunged, indigenous yeasts with a portion of whole bunch in each fermenter to create complexity. A month on skins for tannin development prior to gentle pressing through our basket press, then maturation in French oak barriques for 10 months before bottling. The result; a complex dark and brooding wine with aromas and flavours of black fruits, violets and wild thyme. 

Blackcurrant, bramble, dark cherry, plum, smoke, velvet. A savoury and structural expression of Central Otago Pinot Noir where precision and detail replace volume and mass."

Once the grapes have arrive at the cellars, they are cooled to delay the fermentation, while frequent pump-overs are carried out to achieve a better extraction of colour, aroma precursors and only the soft tannins. The alcoholic fermentation is then done at a controlled temperature of 22-24°C with gentle pumping over. The marc is pressed in a pneumatic press, and then the malolactic fermentation is done in stainless steel tanks.

A dark, cherry-red colour with purple glints. Intense and lingering fruit character showing strawberries and redcurrants. Fresh on the palate with lively tannins and a lingering sensation of spice.

The finca has around 60 hectares of vineyards. All vineyards at Sierra Norte are certified organic. The winery is proud to be the first cellar in Valenciana to obtain full certification in 2000. Growing Tempranillo, Cabernet-Sauvignon, Merlot, Syrah and Bobal in reds, and Macabeo, Chardonnay and Sauvignon Blanc in whites.

This flashy 100% Tempranillo is satisfying, with rich, dark red fruit-cherries and plums-on the nose, touched with a delicate floral note. The wine has a deep, ruby colour. The merlot has provided purple plum flavours and a plump, fleshy, mid-palate structure. Cassis elements and a backbone of mouth-filling, ripe tannins come from the Cabernet Sauvignon. Small portions of Cabernet Franc and malbec donate an ethereal, lifted bouquet, the latter giving a whiff of rose petals, as well as filling out the structure and adding to its length. It is a big, dense, chewy wine, which expands in the mouth and has a lingering, spicy after-taste.
